Southwest Quinoa and Bean Chicken Chili

So I might be a little slow jumping on the bandwagon here but I am OBSESSED with quinoa. Here is another recipe with quinoa that is super fast to throw together.



Ingredients:
3/4 C. quinoa, rinsed
16oz ground chicken 99% fat free (I like Smart Chicken)
1 can white northern beans
1 can black beans
1 can rotel
1 can diced or crushed tomatoes
1 can chicken broth, reduced sodium
1/2 cup water, as needed
2 T. Mrs. Dash Southwest chipotle seasoning
2 T. Cumin
1 T. Chili powder
1/2 T. Garlic powder
1/2 tsp. onion salt
1/4 tsp. ground red pepper

Directions:

1. In a stock pot boil the quinoa (don't forget to rinse) with the can of chicken broth. Boil for 15 minutes or until done. Add water if needed as broth evaporates.
2. While you quinoa is cooking begin browning the chicken in a skillet, when fully cooked set aside until quinoa is cooked.
3. Add ground chicken, beans, rotel, tomatoes and seasonings to quinoa. Cook on medium heat until thoroughly heated.
4. Serve and top with non-fat, plain greek yogurt and cilantro. Green onions and avocado would be good too!

       Approx. 6 servings
      Serving Size: 1-1/2 cups
