"Baked" Apple without the Pie

Eating healthy doesn't mean eating bland and boring foods all the time. Here is a simple recipe that is sure to satisfy any sweet tooth craving without breaking the calorie bank.

Ingredients:
1 apple, sliced and cored
I can't believe its not butter spray (or real butter for those who stay away from all things artificial)
2 T reduced or no sugar maple syrup
Cinnamon to taste
1/2 T. chopped pecans
1  T. dried cranberries

Directions:
Place apple in microwave safe bowl, spray with butter (or drizzle melted butter), drizzle maple syrup and sprinkle with cinnamon. Add chopped pecans and cranberries. Cover with plastic wrap and microwave on high for 3 minutes. Ready to eat.



Eat as a snack, breakfast, or dessert. You can even serve with a low calorie frozen yogurt for a extra special treat ;)
